Advanced Baking and Pastry Finals

Production went very, very well. I made the Tartlet Trio. Three very tiny tartlets in a scarlet pool of fresh raspberry sauce. I was a little worried about them, just because everyone else had these giant, honking pieces of cake or sugar cages or some more elaborate sauce. Mine looked almost dinky in that sugar sea, but Chef T and the other students didn’t seem to have the same opinion. Again, I think I am far more self-critical than anything anyone else could dish out at me. Maybe that’s what keeps me pushing so hard at this.

Officially as of yesterday I have three jobs come August. I will feel no shame should I find myself on Jamaican Air with the ironing flight attendant… I will be working at Ye Olde Pot and Pannery with somewhat reduced hours, working at Hotel Chi-Chi for my internship and assisting the instructor for the community classes at NSCC. Oh and I still have my culinary classes three days a week. It looks like my only time off will be Tuesday and Thursday nights which will most likely be spent as a soccer mom. Yikes. But yikes in a good way. Maybe I should just schedule a massage once a week or something.
